Jungle Bird

With the addition of a bitter aperitivo to its list of ingredients, the Jungle Bird is far from typical in the tropical cocktail category. Rumour has it the original cocktail was created in the early 1970's at the Kuala Lampur Hilton as the welcome drink for the hotel's opening, and it has remained a popular staple in the modern cocktail canon since then. In our take, we eschew the traditional Jamaican or Blackstrap Rum in favour of a non-alcoholic cane spirit and a dash of rich, full-flavoured demerara brown sugar syrup.
Ingredients
20mL | Novara Bitter Aperitivo |
45mL | Non-Alcoholic Cane Spirit (or sub Seedlip Spice 94) |
45mL | Pineapple Juice |
15mL | Fresh Lime Juice |
15mL | Demerara Syrup |
Preparation Instructions
- Add all ingredients to a cocktail shaker filled with ice.
- Cap shaker, and shake vigorously.
- Strain into an old-fashioned glass filled with ice.
- Garnish with two pineapple fronds, added directly to glass, and a pineapple chunk placed on rim of glass.
